Masa Mama, a brand-new taqueria specializing in bold and inventive tacos and modern Mexican fare, is opening in Calgary’s bustling Marda Loop neighbourhood.
Masa Mama is the new concept from the OGs behind the popular pop-up Con Mi Taco, chef Mikko Tamarra and Andrew Ocasion, alongside Syndicate Hospitality Group.
The new space encapsulates the essence of Con Mi Taco with bold tacos served on fresh tortillas. From November 19, it will serve dedicated fans six nights a week from its outpost at 3429 22nd Street SW.
Dished recently had the chance to take a peek at the space and sample some of the dishes on offer at Calgary’s newest taqueria.
With Syndicate behind some of the city’s most stunning restaurants, such as Fortuna’s Row and Orchard, we had high hopes for what to expect. Masa Mama is certainly more low-key than the aforementioned spots, but it’s cozy, inviting and just as beautiful, with intricate tile and artwork adorning the walls.
Masa Mama prides itself on being a modern taqueria experience. While the menu has strong influences from Mexico and Latin America, it also features a fusion of flavours from around the world.
It’s only right to start any taco feast with guacamole, and Masa Mama’s doesn’t disappoint. The addition of nutty salsa macha really took the guac game to the next level.
Tacos are obviously the star of the show here and if you’re a fan of Con Mi Taco, you’ll be pleased to see plenty of returning favourites. The Al Pastor with grilled achiote marinated pork and pineapple and the Quesabirria with chilli braised beef cheeks and fried cheese were both delicious.
One of our favourites of the night was the Mac Mama, which takes inspiration from a fast-food favourite. It features a beef and bacon patty, American cheese, shredded lettuce, and a good helping of tangy Mac sauce, served on a fresh duck fat tortilla.
Another standout was the braised tofu, served on a corn tortilla, banh mi style with housemade hoisin sauce for the perfect sweet and savoury combination.
The margaritas were the best accompaniment to the food, and Masa Mama offers several variations on the classic cocktail, including mango habanero and tamarind.
Be sure to save room for dessert too! The churros are perfectly crispy with a soft centre and paired incredibly with the passion fruit cream. Masa Mama also has a weekly feature tres leches doughnut. Ours came topped with apple and milk crumb, and it’s a dessert we’ll be dreaming about until our next visit.
Masa Mama will be open for dinner Tuesdays through Sundays.
