Perhaps you, like me, have pushed a lot of the weirder and wackier early pandemic food start-ups out of your memory. In that second quarter of 2020, many laid-off restaurant staff, hair stylists, and flight attendants pivoted from their paused public-facing jobs to follow their passion for baking, making hot sauce, or arranging charcuterie platters. Some of these ventures fizzled out as soon as pandemic restrictions lifted, others have grown into full-fledged businesses. The much-beloved pop-up initially known as Con Mi Taco falls firmly into the second category, having just rematerialized as a brick-and-mortar restaurant called Masa Mama.
